Origin: Alishan High Mountain, Taiwan

Cultivar: T-12 (Sijichun)

Harvest: 2024 Fall

Oxidation Level: 20-30% (Light to Medium)

Roasting: Light traditional roasting

Brewing Method

  • 3-5 grams of tea (approximately 1-2 teaspoons)
  • 250ml (8oz) of filtered water
  • Water temperature: 90-95°C (194-203°F)

Instructions:

  1. Rinse your teapot or cup with hot water to preheat
  2. Add tea leaves to your teapot
  3. Pour heated water over the leaves
  4. First steep: 1-2 minutes for a lighter, more floral cup
  5. Subsequent steeps: Increase time by 15 seconds for each re-brew
  6. Re-steeping: This tea can be steeped 5-7 times, revealing new flavor dimensions with each infusion
