Wagashi vs Mochi: What Is the Difference?
Wagashi and mochi are often used as if they mean the same thing. They are connected, but they are not interchangeable.

The Simple Difference

Wagashi is the broad category of traditional Japanese confectionery. Mochi refers to a rice-based preparation with a soft, elastic texture and to sweets made from it. Daifuku is both Wagashi and a mochi sweet, while yokan and nerikiri are Wagashi but not mochi.

Texture Changes Everything

Mochi is recognised for stretch and chew. Other Wagashi may be smooth, firm, delicate, crisp or jelly-like. These differences determine how the sweet is prepared, shaped, stored, served and paired with tea.
