Korean Tea Tasting Experience · Zürich

The tea you’ve never tasted.
Korean tea, five ways.

You may know Japanese green tea or Chinese oolong. Korean tea is something else: fired in iron pots, grown in sea fog, soft, nutty and naturally sweet. In 75 minutes, certified tea sommelier Shane Kim guides you through five of them, so you understand where each flavour comes from and actually feel the difference.

Why Korean tea

New to almost everyone.
That’s the point.

Korea’s harvest is small and mostly drunk at home, so very little reaches Switzerland. For most guests, this is their first Korean tea. Here is why it tastes unlike anything they know.

01 · Taste

Pan-fired by tradition

Korean green tea is traditionally pan-fired in a hot iron pot, often by hand. Instead of the grassy, marine notes of steamed tea, you get a nutty, toasty sweetness Koreans call gosoham (고소함).

Nutty · toasty · round
02 · Terroir

Grown in sea fog

In Boseong, Korea’s first GI tea region, the hills face the southern sea and see 89 foggy days a year. The fog shades the leaves: less bitterness, more umami.

Soft · savoury · sweet
03 · Season

Named by the calendar

Ujeon (우전) is picked before Gokwoo (곡우), the spring “grain rain” around 20 April. The first, most tender leaves of the year, gone in a few days.

Delicate · sweet · fleeting
04 · Range

One leaf, jade to amber

The same leaf, taken from fresh green to yellow to fully oxidised amber. Tasted side by side, you follow one plant through five flavours.

Fresh → floral → roasted
In the cup spring sweetness umami chestnut roasted barley orchid cocoa roasted sweet potato
The tasting journey

From the hills of Boseong to your cup.

Shane, a certified Korean tea sommelier, guides you through five moments. At each one he links what you taste to where and how the tea was made, so you don’t just hear about terroir, you feel it.

Moment 01 · the leaf wakes up
  1. 01

  2. 02

  3. 03
Hold the leaf at every stagePan-fired, rolled, oxidised. You feel and smell each stage in your own hand while Shane explains what the fire, the hands and the air did to it.You see why one leaf becomes five teas
  4. 04

The transformation

You walk in drinking tea.
You walk out tasting it.

Most people drink tea for years without ever really tasting it. For 75 minutes, the only thing on the table is the cup in front of you: four guests, no rush, one tea at a time.

Before · walking in After · 75 minutes later
“My head is on ten things at once.” Seventy-five minutes on one cup, and nothing else.
“Green tea is bitter.” Bitterness was often the water, not the tea.
“Tea is tea.” Five teas from one plant, and you can tell them apart.
“I don’t know how to describe flavour.” You have words for what you taste, written in your own notes.
“I buy whatever the label says.” You know what to look for, and what’s worth paying for.
A cup gulped between emails. A quiet ritual you can repeat at home, with the tea that’s yours.
Book your seat — CHF 75 4 guests per table, weekdays only.
How it’s made

One plant. Three ways of making it.

All five teas come from the same tea plant. What changes the taste is when the leaf is picked, and what happens to it after. You’ll hold the leaves at each stage before you taste the cup.

Green teas

Ujeon · Sejak · Daejak

우전 · 세작 · 대작
  1. Pick→
  2. Pan-fire→
  3. Roll→
  4. Dry
  5. Heat stops the leaf from oxidising, so it stays green and fresh. The name tells you when or how big: Ujeon is picked before Gokwoo, Sejak and Daejak by leaf size.
Yellow tea

Hwangcha

황차
  1. Pick→
  2. Wither→
  3. Roll→
  4. Yellowing (minhuang)→
  5. Dry
  6. The leaf is slowly yellowed by the traditional minhuang process. Light floral and orchid notes, with very little bitterness.
Amber tea

Balhyocha

발효차
  1. Pick→
  2. Wither→
  3. Roll→
  4. Fully oxidise→
  5. Dry
  6. The leaf oxidises all the way to copper. The cup turns amber, with roasted sweet potato, cocoa, honey and chestnut.
The tasting method

Taste like a sommelier. One cup at a time.

For each tea, Shane asks the same four questions a tea sommelier asks, and links every answer back to where and how the tea was made. You write what you notice on your own tasting note.

  1. The leaf

Dry, then wet. Tiny early buds or larger, later leaves, and a cup from pale jade to deep amber: the leaf tells you when it was picked and how it was made.

  2. The aroma

Dry leaf, warm wet leaf, then the cup. Notice the toasty, nutty note that pan-firing gives Korean green tea.

  3. The taste

Sweet, savoury, bitter, and the body: light, silky or round. Notice how it changes from the first sip.

  4. The finish, and where it comes from

How long it stays with you, and what put it there: the sea fog of Boseong, the harvest date, the fire.

Questions

Good to know

I don’t know anything about tea. Is that OK?

Yes. It starts with the leaf, not with theory. Your sommelier guides every step.

I’m not good at describing flavours.

Nobody is at first. The tasting note gives you prompts and scales, so you only tick, mark and add a few words.

I don’t like green tea. Will I like this?

Bitterness usually comes from water that is too hot. Each tea here is brewed at its own temperature, and two of the five aren’t green at all.

Is it formal?

No. Four guests around one table. It is a conversation, not a ceremony.

Can I come alone?

Yes. Book one seat and share the table with up to three other guests.

Do the teas contain caffeine?

Yes. All five are true teas from the tea plant. Cups are small; let us know if you are sensitive to caffeine.

What language is it in?

English.

Where is it?

At our tea house: Vulkanstrasse 110 C, 8048 Zürich.

Allergies, pregnancy or access needs?

Tell us when you book and we’ll adjust the tasting where we can. All five teas contain caffeine.

Can I book for a group or company?

Yes. Write to info@kteashop.com for a private table or a Tea Omakase.

Questions

Good to know

I don’t know anything about tea. Is that OK?

Yes. It starts with the leaf, not with theory.

I’m not good at describing flavours.

The tasting note gives you prompts and scales. You only tick, mark and add a few words.

I don’t like green tea.

Bitterness usually comes from water that is too hot. Two of the five aren’t green at all.

Is it formal?

No. Four guests around one table: a conversation, not a ceremony.

Can I come alone?

Yes. Book one seat and share the table with up to three guests.

Do the teas contain caffeine?

Yes, all five. Cups are small; tell us if you are sensitive.

Language and location?

English. Our tea house: Vulkanstrasse 110 C, 8048 Zürich.

Allergies, pregnancy or access needs?

Tell us when you book and we’ll adjust where we can.

A group or company?

Write to info@kteashop.com for a private table or a Tea Omakase.
