The pairing system

A tasting, one pairing at a time.

Built like a wine pairing, on four kinds of harmony. Rule one: the tea never outweighs the dish.

  1. Illustrative image: scallop crudo with cucumber and green apple beside a glass of cold-brew green teaUjeon green tea leaves
    01
Course 1 · Lift · A light partner carries the finish.

Scallop · cucumber · green apple
    with Ujeon, cold brew

Korean green tea · cold brew · stemmed glass

    • Sweet umami
    • Fresh green
    • Mineral finish

A pale, silky tea lifts the sweetness of raw scallop without covering it.

  2. Black truffle tagliolini with cultured butter and ParmigianoAged Shou Pu-erh tea leaves

Course 2 · Echo · Earthy aroma harmony

Black Truffle Tagliolini · Cultured Butter · Parmigiano
    with Aged Shou Pu-erh

Yunnan fermented tea · warm · small cup

    • Earthy
    • Woody
    • Smooth

The earthy, woody depth of aged Shou Pu-erh echoes the aroma of black truffle, while its smooth texture complements the richness of butter and Parmesan.

  3. Illustrative image: sliced duck breast with roasted root vegetables beside a wine glass of amber tea

Course 3 · Cleanse · Tannin or chill resets the palate.

Duck · jujube · roasted root vegetables
    with Reserve Balhyocha

Korean black tea · served in a wine glass

    • Dried jujube
    • Warm root
    • Smooth tannin

Dried jujube in the cup meets the glaze; soft tannin clears the richness of the duck.

Questions venues ask first.

Can you design a non-alcoholic pairing for a tasting menu?

Yes. We design hot, cold and sparkling tea pairings course by course with your chef, at the level of a Michelin-starred wine pairing, and train your team to serve them.

Do you only supply matcha?

No. Matcha and hojicha are one part of the menu. We also build tea lists and signature drinks with green, white, oolong, black and dark teas from Korea, Japan, China, Taiwan, India and Sri Lanka, plus caffeine-free infusions.

What does menu development include?

Recipes, cost per cup, pricing logic, menu names and descriptions, service SOPs and staff training. You can start with one drink or a full tea menu.

What are your minimum orders?

Set per venue, so a small café and a larger group each start at a sensible level. You get the exact figure with your samples.

Where do you deliver?

We dispatch from Zürich across Switzerland and Europe, with selected worldwide markets. Lead times are confirmed with your first order.
